  • 3 lbs beef chuck roast
  • 1 cup keto-friendly BBQ sauce
  • 1/4 cup apple cider vinegar
  • 2 tbsp all-purpose seasoning
  • 1 tbsp chipotle chili powder
  • 2 tsp onion powder
  • 1 tsp sweet paprika
  • salt and black pepper to taste

Instructions
 

  • Preheat your oven or grill to 300°F (150°C).
  • Season the beef chuck roast with salt, black pepper, onion powder, sweet paprika, and chipotle chili powder.
  • Place the seasoned beef chuck onto a baking sheet, then into the preheated oven. Cook for about 2 hours, or until it's tender. If using a grill, wrap the beef in tin foil.
  • Once tender, cut the beef chuck roast into 1-inch cubes, then return them to the baking sheet.
  • Drizzle the cubed beef with apple cider vinegar and keto-friendly BBQ sauce, then toss to combine.
  • Increase the oven or grill temperature to 400°F (200°C), then place the baking sheet back in the oven for another 20-25 minutes, or until the BBQ sauce is caramelized.
