This hearty mushroom soup is a beautiful combination of earthy flavors from a variety of mushrooms and subtly sweet undertones from sweet potatoes, perfectly balanced by the unique crunch of a flaxseed crumble.

Soup

  • 4 cups mushroom vegetable stock
  • 2 large sweet potatoes
  • 8 Portobello mushrooms
  • 1 cup Shiitake mushrooms
  • 2 tsp salt
  • 1 large onion
  • 2 tsp mixed spices
  • 2 cloves garlic
  • 1 tsp thyme
  • 3 tbsp olive oil
  • 1/2 tsp kosher salt

Flaxseed Crumble

  • 1/2 cup dates
  • 1/4 cup flaxseed
  • 1 bunch fresh parsley

Instructions
 

  • Preheat oven to 400 degrees F (200 degrees C). Peel and cube sweet potatoes. Toss in 1 tablespoon olive oil and bake for 20-25 minutes until tender.
  • In a large pot, sauté onion and garlic in 2 tablespoons olive oil until softened. Add the Portobello and Shiitake mushrooms, and cook for 5-7 minutes.
  • Add the vegetable stock, thyme, and kosher salt. Let it simmer for 20 minutes.
  • Blend until smooth using a hand blender or stand blender.
  • Roughly chop the dates and parsley. Mix together with the flaxseeds, a pinch of salt, and mixed spices to create the crumble.
  • Serve the soup in bowls, topped with a scoop of roasted sweet potato and a sprinkle of the flaxseed crumble.
