Lobster Cakes

  • 2 cups hand-made pretzels, crushed
  • 2 cups cooked lobster meat, diced imitation lobster meat is a money-saving opiton
  • 2 large eggs
  • 1/2 cup mayonnaise
  • 1/4 cup green onions, chopped
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 zest of one lemon
  • salt and pepper to taste
  • 1/2 cup Rosemary Lemon Aioli
  • oil for frying

Rosemary Lemon Aioli

  • 1 cup mayonnaise
  • 1 tbsp fresh rosemary, finely chopped
  • 1 clove garlic, minced
  • 1 juice and zest of one lemon
  • salt and pepper to taste

Instructions
 

  • In a large bowl, mix lobster meat, eggs, mayonnaise, green onions, Dijon mustard, lemon juice, and lemon zest. Season with salt and pepper.
  • Shape the mixture into 4 equal patties and coat each patty with crushed handmade pretzels.
  • Heat oil in a large skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and crispy.
  • For the Rosemary Lemon Aioli, in a small bowl, combine mayonnaise, rosemary, garlic, lemon juice, and lemon zest. Season with salt and pepper.
  • Serve the Pretzel-Crusted Atlantic Lobster Cakes hot with a dollop of Rosemary Lemon Aioli on top.
