  • 2 lbs boneless pork loin
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • 1/2 cup unsalted butter softened
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp Dijon mustard
  • 2 cups broccoli florets optional, for a side dish

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Pat the pork loin dry with paper towels. Rub it with the Dijon mustard, making sure to coat the entire surface evenly. Season with salt, black pepper, and paprika.
  • In a large oven-safe skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the pork loin and sear on all sides until it is golden brown, about 2-3 minutes per side.
  • In a small bowl, combine the softened butter, minced garlic, parsley, rosemary, and thyme. Mix until well combined.
  • Remove the skillet from heat. Spread the garlic herb butter mixture over the top of the seared pork loin.
  • Transfer the skillet to the preheated oven. Bake for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
  • While the pork loin is baking, steam or roast the broccoli florets as a low-carb side dish.
  • Once cooked, remove the pork loin from the oven and let it rest for about 10 minutes before slicing. This allows the juices to redistribute within the meat, ensuring a moist and flavorful dish.
  • Slice the pork loin and plate it with the steamed or roasted broccoli, if prepared. Spoon any remaining garlic herb butter from the skillet over the slices for added flavor.
