  • 1 lb Italian green beans trimmed and steamed
  • 4 medium tomatoes diced
  • 8 slices bacon chopped
  • 1 cup mozzarella cheese shredded
  • 1 cup Parmesan cheese grated
  • 2 cloves garlic minced
  • 1 medium onion finely chopped
  • 1/4 cup extra-virgin olive oil
  • 1 tsp fresh thyme chopped
  • 1 tsp fresh rosemary chopped
  • 1/2 tsp black pepper
  • Salt to taste
  • Fresh basil leaves for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, cook the chopped bacon until crispy. Remove with a slotted spoon and set aside, leaving the bacon fat in the skillet.
  • Add the minced garlic and finely chopped onion to the skillet. Sauté until the onions are translucent and the garlic is fragrant, about 3-4 minutes.
  • Add the steamed Italian green beans to the skillet, tossing them gently to coat in the bacon fat and aromatics. Sauté for another 3-4 minutes.
  • Stir in the diced tomatoes, fresh thyme, and rosemary. Continue to cook until the tomatoes start to soften, about 5 minutes. Season with black pepper and salt to taste.
  • Transfer the green bean and tomato mixture to a 9x13-inch baking dish. Sprinkle the cooked bacon evenly over the top.
  • Evenly distribute the shredded mozzarella and grated Parmesan cheese over the casserole.
  • Drizzle the extra-virgin olive oil over the top and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly with a golden-brown top.
  • Remove from the oven and let it cool slightly. Garnish with fresh basil leaves before serving.
