Grilled Pork Loin

  • 2 lbs pork loin
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Cheesy Garlic Cauliflower Mash

  • 1 large head cauliflower cut into florets
  • 1 cup shredded cheddar cheese
  • 2 cloves garlic minced
  • 2 tbsp butter
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Sautéed Spinach

  • 2 tbsp olive oil
  • 4 cups fresh spinach
  • 2 cloves garlic minced
  • Salt and pepper to taste

Instructions
 

  • Grilled Pork Loin
  • Preheat your grill to medium-high heat. In a small bowl, combine olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix well to form a marinade. Rub the marinade evenly over the pork loin.
  • Place the pork loin on the preheated grill and grill for about 20-25 minutes, turning occasionally, until the internal temperature reaches 145°F. Remove from the grill, cover with aluminum foil, and let rest for 10 minutes before slicing.
  • Cheesy Garlic Cauliflower Mash
  • Bring a large pot of water to a boil. Add the cauliflower florets and cook until tender, about 10 minutes. Drain well.
  • In a food processor, combine the cooked cauliflower, shredded cheddar cheese, minced garlic, butter, heavy cream, salt, and pepper. Process until smooth and creamy. Adjust seasoning as needed.
  • Sautéed Spinach
