This Creamy Spinach and Feta Phyllo Bites recipe is a delicious Mediterranean appetizer that combines creamy spinach and feta cheese filling wrapped in delicate, crispy phyllo dough. Perfect for any occasion!

  • Olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 4 cups fresh spinach chopped
  • 1/4 cup fresh dill chopped
  • 1/4 cup fresh parsley chopped
  • 1/2 cup feta cheese crumbled
  • 1/2 cup cream cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 sheets phyllo dough
  • 1/4 cup melted butter

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent and fragrant.
  • Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
  • In a mixing bowl, combine the cooked spinach, fresh dill, fresh parsley, feta cheese, cream cheese, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
  • Lay one sheet of phyllo dough on a clean surface and brush it with melted butter. Repeat this process, layering four sheets of phyllo dough, brushing each layer with melted butter.
  • Cut the layered phyllo dough into 12 equal squares.
  • Place a spoonful of the spinach and cheese mixture in the center of each square.
  • Fold the corners of each square towards the center, creating a small pocket. Press the edges together to seal the pockets.
  • Place the filled phyllo bites onto the prepared baking sheet and brush the tops with more melted butter.
  • Bake in the preheated oven for 20-25 minutes or until golden brown and crisp.
  • Remove from the oven, let them cool slightly, and serve warm.
