  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder

  • 1 tbsp chopped chives

Instructions
 

  • Preheat the oven to 425°F (220°C).
  • Wash and peel the potatoes. Cut them into thick fries, about 1/2 inch wide.
  • Soak the potatoes in water for 30 minutes.
  • Drain the potatoes and dry them with paper towels.
  • In a large bowl, toss the potato fries with olive oil, paprika, garlic powder, salt, and pepper until well coated.
  • Arrange the fries in a single layer on a baking sheet lined with parchment paper.
  • Bake for 25-30 minutes, flipping halfway through, until the fries are golden brown and crispy.
  • While the fries are baking, prepare the creamy dip. In a small bowl, mix together the Greek yogurt, chopped dill, lemon juice, minced garlic, chives, and parsley. Season with salt and pepper to taste.
  • Once the fries are done, remove them from the oven and let them cool slightly.
  • Serve the crispy baked fries with the creamy dip on the side.
