  • 4 pieces boneless chicken breasts
  • 1 cup pitted Kalamata olives chopped
  • 1 cup crumbled feta cheese
  • 1 tbsp fresh thyme leaves
  • 2 tbsp olive oil
  • Salt and fresh ground pepper to taste
  • 2 cloves garlic minced
  • 1 lemon zested and juiced
  • 1/2 cup dry white wine
  • 2 tbsp chopped fresh basil

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Cut a slit in each chicken breast to form a pocket. Be careful not to cut all the way through. Season the chicken with salt and pepper.
  • In a bowl, combine the chopped olives, feta cheese, and thyme. Stuff each chicken breast with the olive mixture.
  • Heat olive oil in a large, oven-safe pan over medium-high heat. Add the stuffed chicken, cooking about 5 minutes on each side until browned.
  • Remove the pan from heat. In the same pan, add the minced garlic, lemon zest, lemon juice, and white wine, stirring to combine.
  • Transfer the pan to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through.
  • Sprinkle with fresh basil before serving.
