Ingredients
  

  • 8 large eggs
  • 1 cup chopped green / red bell pepper
  • 1/2 cup chopped chives
  • 2 tbsp coconut oil
  • 1 cup shredded mozzarella cheese
  • 1 cup diced chicken breast
  • salt and pepper to taste
  • 1/8 cup parsley optional - garnish to taste
  • 1/8 cup basil optional - garnish to taste

Instructions
 

  • Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
  • In a large oven-safe skillet, heat the coconut oil over medium heat.
    An ice cube in a frying pan on a stove.
  • Add the diced chicken breast to the skillet and cook until browned, about 5-7 minutes. Remove the chicken and set it aside.

  • Add the chopped green pepper to the skillet and sauté until tender, about 5 minutes.

  • In a large bowl, whisk together the eggs, chopped chives, salt, and pepper.

  • Return the cooked chicken to the skillet with the green peppers, then pour the egg mixture over top.

  • Sprinkle the shredded mozzarella cheese over the egg mixture in the skillet.
