Ingredients
  

  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons almond butter
  • 1 tablespoon tamari or coconut aminos
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon chili garlic sauce
  • 1 teaspoon grated ginger
  • 2 cloves garlic minced
  • Salt and pepper
  • Bamboo skewers
Makes: 12inch round2.5inch height

Instructions
 

  • Preheat the grill to medium-high heat.
  • Cut the chicken breasts into long, thin strips.
  • In a small bowl, whisk together the olive oil, almond butter, tamari or coconut aminos, rice vinegar, sesame oil, chili garlic sauce, grated ginger, minced garlic, salt, and pepper.
  • Thread the chicken strips onto the soaked bamboo skewers.
  • Brush the chicken skewers with the prepared sauce, reserving some for serving.
  • Grill the chicken skewers for about 4-5 minutes per side, or until cooked through and slightly charred.
  • Remove the chicken skewers from the grill and let them rest for a few minutes.
  • Serve the grilled chicken skewers with the reserved sauce for dipping.
